About the Maestros

Doña Oliva and Don Marcelo tell us:


Our agaves are planted in the Central Valleys every summer, just before the rainy season. We carefully cultivate and tend to them for 7 to 10 years, protecting them from weeds and pests without using harmful pesticides.

Our family has been dedicated to producing mezcal for four generations. From a young age, Doña Olivia Martínez and Don Marcelo Santiago Méndez were already working in the Palenque (mezcal production site). As a child, Don Marcelo even bought a horse to travel to various mezcal factories to grind maguey, gaining knowledge with each visit.

Fate brought the couple together, and they established their own Palenque, crafting their very own mezcal, which they initially distributed to Mexico City by railroad. Since then, they have been perfecting their process while honoring tradition and artisanal methods, preserving the unique flavor and quality of their mezcal. Today, they guide their family toward the future, passing down the mastery of mezcal-making through generations.
